Daily Backups with Two HD's...best backup configuration?

My server has two hard drives (only one is used/needed) and is backed up offsite daily. This is good, but what would be the smartest thing to do with my other drive? Should I simply make daily backups to it as well, or should I request a RAID 0 setup or other drive mirroring method for drive failure security? It seems to me that making occasional backups to the second drive could be used to store data should my server get hacked (and someone deletes everything on the primary drive), but could result in downtime (and some lost configuration data and newest files, database updates, etc.) if the primary drive failed. Correct me if I'm wrong, but mirroring the drives could allow the site to continue operating should one drive fail and would not require a comprehensive restore.

Right now, I'm leaning towards mirroring the drives, but I would really appreciate your expert opinions on the subject. Which would you recommend?
